Executive Pastry Chefs usually work in businesses that have a team dedicated to crafting desserts and treats.

Some examples of businesses in which our students have gone on to enjoy great careers include hotel kitchens, large restaurants, bakeries and patisseries, and even cruise ships!

Their task? To supervise other pastry chefs and staff, and to be responsible for all desserts.

They usually work with other pastry chefs, that’s why excellent communication and being a good team player is a must.

In addition to supervising however, there’s also a large management portion to this position. As executive pastry chef, you’ll also be responsible for:

  • Inventory and ordering stock
  • Budgeting
  • Developing a dessert menu
  • Coming up with specials

Pastry Sous Chef

A Pastry Sous Chef, or sub chef, is the second-in-command after the Executive Pastry Chef.

While the executive pastry chef is concerned more with the high-level stuff, a Pastry Sous Chef has much more of a hands-on role in the kitchen, supervising pastry chefs and helping to prepare desserts.

Additionally, they may also take on the responsibilities of Executive Pastry Chefs, especially if they are not around.

Just like the Executive Pastry Chefs, Pastry Sous Chefs need to have knowledge and expertise in creating recipes and menus, managing workflow, and managing staff.

Pastry Chef

Pastry Chef: the frontline when it comes to desserts.

To succeed as a Pastry Chef, you’ll need an artistic eye in glazing, icing, and decorating pastries in addition to all the technical skills needed to thrive in any kitchen.

Pastry Chefs usually work alongside team of bakers managing them and leading the whole team of bakers in preparing the pastries.

Many find work in bakeries, restaurants, and bistros, ensuring that food safety standards are being met consistently.

You may also find yourself working alone on occasion – smaller kitchens may not need Executive or Sous Chefs for pastries, only employing a single Pastry Chef.

Baker
